Ben: This is a Rotling — red and white grapes in the same press, a category German wine culture quietly apologizes for. Two ex-chefs in Franken make it from a friend's farm that's mid-way through organic conversion, and they say so on the label instead of hiding it. Serve it really cold.

In your glass: Looks pink, tastes dry: middle weight, next to no drying grip, and a fresh middle built for food with heat. Because red and white grapes went through the press together, the nose leans red — think redcurrant — while the mouth stays cold, light and quick. Pick it really cold for taco night; if you were hunting a classic Provence rosé, this is the odd cousin.

Serve it: 45 minutes in the fridge. Yes, really cold. — Likes air — day two is arguably better.
